No-Bake Coconut Lemon Bars

This lemon bar recipe falls under my favorite categories: easy, quick, and inexpensive.
The best part is that it is also guilt free, as it has natural sugars (from the dates), zero gluten, zero dairy, and is actually quite healthy, considering the protein from the almonds, and the cleansing effect of the lemon.
You could swap out the almonds for a different nut if almonds aren’t your thing. You could add a bit more lemon juice if you like you lemon bars extra lemony. You could also get a substantial energy boost by adding some seeds (mmm…Chia!). The recipe is so simple, it’s really easy to experiment. It’s also no-bake, which means that it’s quick to make, and creates very few dirty dishes for cleanup!

9 x 9 Pan
1 cup almonds, chopped
1 1/2 cups pitted dates
1 cup dried unsweetened shredded coconut
1 vanilla bean or 1 tsp. of vanilla
2 Tbsp. juice from lemon
Zest of 1 lemon
1/2 tsp. sea salt
Powder the almonds in a food processor. Use a small amount of the almond flour to dust the bottom of a 9 x 9 glass pan. (This can also be done with shredded coconut!) Add the dates, lemon juice, salt, and vanilla to the food processor. Once well mixed, remove ingredients from food processor and hand knead the mixture into the pan. Garnish with a sprinkle of coconut and lemon zest. Chill for several hours until firm. Cut into squares.
You could also roll the mixture into bite size balls, then roll them in coconut. 🙂
